On My Chopping Board Today

I’m as pleased as a potato (a phrase i just made up) to share some of my favourite ingredients for cooking with you.

Dried red chillies, ginger, cumin seeds, garlic, turmeric powder, chilli powder, curry leaves

More often than not, there’s at least four out of the seven ingredients — that you see on my chopping board — in the food i cook.

I love everything about Indian spices. Everything. The way they look and feel and smell and taste. Everything.

And these aromatic beauties lend such character and flavour to food that you cannot help but relish every bite, enjoying the slow tempered spices in ghee (clarified butter), sizzled and poured hot into a curry or in today’s case, khichdi (rice and lentils cooked together).

The delectable bitterness of the curry leaves, the punch of ginger, the zing of garlic, the comfort of cumin, the colour of turmeric and the spice of red chillies – what’s not to love?

As you can see, i love keeping all the ingredients ready (in a steel plate; the chopping board today was for the background) before actually delving into the cooking because preparation, for me, is as important as the actual cooking itself.
