This Holi, the colour that’s making me most happy is this.
Fresh spinach which holds
infinite so many possibilities of what it might become – palak paneer (creamy spinach gravy with cottage cheese cubes), lasooni (garlic) palak, dal (lentils) palak, soup or a smoothie.
Green makes me happy. And greens do the same.
